Lobster Soup
6 ounceslobster meat
2 1/4 teaspoon salt
1 1/2 soy sauce
4 1/2 cups dshi
2 medium cucumbers,
sliced thin
8 dried mushrooms
4 pieces lemo rind
Mince the lobster meat, pour 1/2 teaspoon salt over it, and boil.
Gradually add 3/4 teaspoon soy sauce and 1/4 cup of dashi to the
lobster. peel and slice the cucumbers. Boil mushrooms in 1/4 cup
of dashi and 3/4 of salt. Into each of four bowls place pices of
boiled lobster, cucumbers, and mushrooms. Heat together 4 cups
of dashi, 3/4 teaspoon salt, and 3/4 teaspoon soy sauce; pour some
into each bowl. |
